Polevane vanilkovo-kakaove cupcakes s dulce de leche kremem

 Honila me mlsna a premyslela jsem, cim to zastavit. Chutove poharky pracovaly na plne obratky a nedaly se zmast ani kompletnim uklidem bytu.  Pri uklidu detskeho pokoje jsem volila nejake rezy, v obyvacim pokoji uz to byl kolac a v kuchyni cupcakes nebo muffiny. V podstate se jedna o to same, ovsem na muffinech mi vadila absence kremu a na cupcakes zase sussi testo. Premyslela jsem, cim testo zvlacnit, a tak vznikl napad na politi sirupem. Zvitezily tedy polevane vanilkovo-kakaove cupcakes s kremem, ktery miluji, s prichuti dulce de leche. Krem delam z pudingu bez vareni (ruzne prichute), slehacky a mleka. Dale pridavam ruzne ingredience (kakao, vanilku, skorici, rumovou trest, sherry - fantazii se miry nekladou),  v tomto pripade kremovou bilou cokoladu. Krem krasne drzi, chutove je lehci povahy, s jemnou maslovou prichuti. Krem je univerzalni, hodi se na kolace, dorty, rezy, a podobne. Zakladni recept na krem je: 1 puding bez vareni, 500 ml smetany ke slehani, 100 ml mleka a dve lzice praskoveho cukru. To vse dame do slehace a vyslehame krem. Jednoduche, temer bez prace.

Co budeme potrebovat:

160 g zmekleho masla
80 g trtinoveho cukru
4 vejce
240 g hladke mouky
90 ml mleka
5 lzicek kakaa
2 lzicky prasku do peciva
spetka soli
lzicka vanilkove esence

(je dulezite, aby vsechny ingredience meli pokojovou teplotu)

sirup:
1 hrnek vody
1 hrnek cukru
par kapek citronove stavy
2 lzice javoroveho sirupu

krem:
1 dulce de leche puding (bez vareni)
400 ml smetany ke slehani
1/4 hrnku mleka
2 lzice kremove bile cokolady

 

Jak na to:

Vodu a cukr na sirup privedeme za obcasneho michani k varu, pridame par kapek stavy z citronu a na mirnem ohni varime cca 5 - 10 minut, do konzistence sirupu. Nechame vychladnout. Po vychladnuti vmichame javorovy sirup.

Maslo a cukr vyslehame v hladkou penu. Pomalu zaslehame vejce (po jednom; pokud slehate v robotu, snizte obratky na minimum a doporucuji K-metlu). Prosejeme mouku s praskem do peciva a soli.
Do maslove smesi opatrne pridavame mouku a mleko (vzdy stridave a po troskach tak, abychom zacali i skoncili moukou). Testo rozdelime na dve poloviny. Do jedne pridame vanilkovou esenci, do druhe kakao a lzici mleka. 
Kosicky na cupcakes vytreme olejem (ja delam vetsi, testo mi vyslo na 9 kosicku, u mensich vyjde testo na dvojnasobek), vysypeme kokosem a stridave (lzici) davame vrstvu tmaveho a svetleho testa. Pokud pouzivame jednorazove papirove kosicky, nemusime vymazavat olejem a vysypavat.
Peceme pri 180 stupnich cca 15 minut. Pro kontrolu provedeme spejlovou zkousku.
Ihned po upeceni kazdy cupcake polejeme 5 lzickami sirupu a nechame vsaknout. Pote vyndame z kosicku. Pokud se nam cupcakes nerovnomerne "nafoukly", muzeme je seriznout nozem, ale vetsinu nepresnosti ukryje a doladi krem. Nechame vychladnout.

Puding, slehacku a mleko dame do slehace a uslehame tuhy krem. Primichame bilou cokoladu.

Cupcakes ozdobime kremem a dale dle vlastni fantazie. Ja pouzila praskove cappuccino, strouhanou cokoladu, kulicky Nesquik a vlasske orechy.

Preji dobrou chut. Jeste jedna rada na zaver. Doporucuji dortiky nechat rozlezet do druheho dne, pokud vydrzi. U me je to trochu problem, nebot ma draha polovicka preslapuje v kuchyni uz u peceni (cehokoli sladkeho) a netrpelive vyckava konec. Hlavni je, ze mu chutna..
